Our lobsters are mainly caught on the East Coast of Tasmania where the water is environmentally friendly. Lobster is also known here as crayfish. The scientific name is (jasus edwardsii). Tasmanian Rock Lobster is known for it's size, sweet taste and firm flesh, which is highly desired by the main export markets. The peak period for lobster fishing is December to February when prices are low, from March to August prices are higher due to low catches.
